The eggplants are very versatile but are often seen with some caution when including it in any preparation. Today I propose a different and very pleasant way to enjoy this very healthy vegetables with my recipe eggplant mini pizzas .
Besides being very good these mini pizzas can be a great option for an aperitif with good drinks with friends. It is certainly a healthier and enjoyable way to snack.
A large eggplant, a tomato, a medium onion, a clove of garlic, 120g mozzarella cheese, olive oil, salt and ground black pepper.
How to make mini pizzas eggplant
Let’s cut the eggplant into slices of about one centimeter thick. Now let’s put on a baking sheet, season with salt and pepper and drizzle with olive oil. We put them in the hot oven at 180 ° C for about 30 minutes approximately.
Meanwhile, let’s chop the onion and the garlic and tomato which we will have previously removed all seeds. We heat olive oil in a pan and fry the onion for a couple of minutes. Then add the garlic and tomato. Stir, season with salt and pepper and let in the light (low intensity) for about 10 minutes .
Removed the oven and eggplants COATING with tomato sauce just to do as well as pieces of mozzarella cheese . We put e n the oven for another 10 to 15 minutes .
