In summer we are all much less formal and change our plans, so it is not unusual that one day nobody comes to dinner and get together other brothers, brothers and nephews in makeshift family parties. For those occasions, I love making simple recipes like this pizza eggplant and bacon that appeal to everyone how old they are.
The good news is that with the ingredients we use to cover the pizza, are getting used to the little ones to take more vegetables as these can be part of your favorite dishes, so then also taken in other preparations.
Ingredients for 4 people
For the dough: 200 g of wheat flour, 3 g fresh baker ‘s yeast, 3 g of salt, 20 ml of extra virgin olive oil and 125 ml of water
For topping: 1 eggplant, 150 g of bacon, 1 ball of mozzarella and two tablespoons of tomato paste, salt, pepper, oregano and olive oil
Making pizza eggplant and bacon
We started preparing dough by mixing the ingredients and work them a few minutes. Then let stand 30 minutes in the refrigerator and then stretch and form the basis of our pizza. While the dough rests, let eggplant peeling and cutting into thin slices.
Extend the base of the pizza and give folds the edges to have a rustic look . We extend tomatoes with the back of a spoon and let handing the mozzarella cutting it pinches and distributing it throughout the pizza.
Eggplant put discs turning to pizza and filling in the center and fill the gaps available with the bacon cut into strips . Once finished, add a pinch of salt, a little oregano and a trickle of olive oil.
Bake at 220 degrees in preheated oven so that the base is crispy and the filling is integrated to melt the cheese and go dorandeo the other ingredients. Serve immediately sprinkled more oregano on top.

The pizza eggplant and bacon is a very peculiar taste pizza which surprises and pleases everyone. The texture of roasted eggplant is delicious and flavor contrasts nicely with the bacon. To accompany, we recommend a chilled white wine.
