I love to dine occasionally a homemade pizza, so I’m always looking for new flavors and ingredients that make each time you prepare is different from the previous one . Today I present a pizza with smoked salmon, capers and mascarpone escaping from the classical base with tomato and meat, as used especially when there is little in the house.
In this case the dough is the same coverage that was later added to the surface , creating a layer of mascarpone cheese with a hint of garlic that contrasts perfectly with smoked fish. As it is difficult to explain this original blend of flavors, the best thing you judge to prepare you to see for yourselves. For me now it’s one of my favorites.

For homemade pizza dough : 400 g flour, 200 ml of warm water, 50 ml of olive oil, 1 tablespoon of dry baker ‘s yeast, 1 teaspoon sugar, salt.
For the filling : 125g of mascarpone, 100 ml of cream fraiche or cream, 3 tablespoons grated Parmesan cheese, 1 small clove garlic, ½ teaspoon lemon zest, 1 tablespoon chopped parsley, pepper, salt.
For topping : ½ red onion into slices, 160 g of smoked salmon, 2 tablespoons tablespoons capers.
Making pizza with smoked salmon, capers and mascarpone
We begin preparing our homemade pizza dough. To do this in a bowl pour the warm water and oil , dry yeast and sugar. We stir with a whisk and leave ten minutes for the yeast foams and working properly.
Then we add the flour with the salt and knead with hands until achieving an elastic dough and prevent sticking . We left in a container in a warm place an hour for mild. When you pass the desgasificamos time and stretched over a baking sheet or pizza stone, yet still grow a little while preparing filling. Preheat oven to 220 degrees with heat below.
In a bowl mix the mascarpone cheese, Parmesan, cream or creme fraiche if we have that, the clove of garlic minced, lemon zest, parsley, salt and pepper. Stir everything with a whisk until smooth cream. We split the half of this mixture over the dough .
Chop the red onion into very thin sheets and have top of the cheese. Bake for twenty-five minutes . Once out of the oven we put the smoked salmon into pieces over, capers and remaining cheese into small piles. We serve very quickly.
